Hey girl hey!
Usually I am up super early Monday, Wednesday and Friday writing my blog posts before baby wakes up and before I head to work but I am actually writing this on Sunday night this week! Drinking a big glass of wine 🙂 Nonetheless getting my blog post done!
I would also like to share that I meal prepped 4 new recipes PLUS 2 snack options today after we celebrated a birthday party at Chuck E Cheese (baby Weaver’s first CEC experience I must add) so I def deserve this glass of wine 🙂

I am wearing a size small in this dress and I love this mauve-y pink color. If you are a shorty like me then you can totally wear this to work. I think if you are 5’5″ or taller than this is more of a date night or girl’s night option. Either way, it’s so cute!!
So if you are anything like me, you spend time browsing Pinterest recipes before your weekly grocery trip. That is what I did this morning as I got to sip my coffee in peace and quiet before the fam woke up! I try to meal prep every Sunday and by meal prep I don’t always mean healthy 🙂 I can usually cook the same thing for my lunches every day but if the hubby gets bored of what’s in the fridge he will start to eat out. And then if he says he goes to pick something up, Lord knows I have no will power, haha! Also, now that baby is eating table food, I have been “meal prepping” his lunches and snacks too. This family is really getting high maintenance these days.
Typically, baby Weaver will eat whatever we are eating but I didn’t want to send him to school with chicken Florentine and chicken caprese leftovers lol. He’s already dressed so “extra’ for daycare.
What I Made For Baby Weaver This Week:
Fake Out Mac & Cheese – This actually looked really good when I got done making it. I didn’t taste it but I put some in a Tupperware for myself to try tonight! The greek yogurt and avocado mix made it super creamy as if it was really cheesy mac and cheese. Praying he likes it at school today.
Cheesy Taco Sticks – Super easy! Plus he loves ground turkey, cheese and bread so I know he’ll love these. The days he takes these to daycare I’ll pack him a side of carrots for lunch too.
3 Ingredient Healthy Cookies – So, these are questionable LOL. I typically send him with fruit for his snacks but I was trying to change it up and tried these cookies. I ate one and I must be honest…I didn’t love it. BUT I am hoping his palette will. He isn’t comparing it to Tiff’s treats like Mommy is so crossing my fingers. I’ll keep you posted!
What I Made For The Husband and I:
Easy Chicken Florentine Casserole – They don’t call this easy for nothing! This looked soooo good when I pulled it out of the oven guys! I’ll report back on what the husband thinks.
Cheesy Caprese Chicken and Quinoa Casserole– Cheese, cheese and more cheese. I know the husband is going to like this one! Again, I’ll have to report back because I was too busy drinking wine and cooking to try any of these haha!
Peanut Butter Energy Bites – These are more for me than Brandon. He’s probably not going to eat any of them and that’s okay 🙂 This is literally only 5 ingredients and I bought the ingredients like 2 weeks ago but never made them. I’ve had them before (and love them!) but I’ve never made them myself. Super easy.
As you can see I chose casseroles for dinner this week because they are so easy and they are also good as leftovers.
